Marinated Overnight
Meat rests in yoghurt, ginger, green chilli and our house garam masala for a full night — long enough for the spice to reach the bone.
Layered, Never Mixed
Aged long-grain basmati is parboiled and layered over the marinade with fried onion, mint, saffron milk and ghee. Layers stay layers.
Sealed & Slow-Fired
The handi is sealed shut with dough and left on a low flame. No steam escapes, so every bit of aroma goes back into the rice — that's dum.
